Preparation time (KDS)
Kitchen preparation speed, comparable across points of sale: item × POS matrix (slowest highlighted, Gap column), durations in m:ss. The default metric is the MEDIAN, less sensitive to extreme values than the average. Good to know — the duration measured is that of each SEND to the kitchen, not the ticket's lifetime — and outliers are filtered out (line > 1 h, order > 4 h ignored). The figures are therefore more accurate (and lower) than in the old back office: the times haven't "dropped," the measurement has changed.
Caution — the period is capped at 30 days: beyond that, the start date is automatically reset to End − 30 days. On the "period" views of pre-aggregated dimensions, the median and quartiles are estimates (only min/max are exact) — tick "By day" for the exact values.
Good to know — restaurant without KDS: the screen shows "KDS module not available" — this is normal.
